Gluten Free Pumpkin Pancakes

Susan Brinson from houseofbrinson.com has a great recipe for Pumpkin Pancakes, Gluten Free!
While you can find more detailed instructions on her site, you can find the main ingredients below:

Gluten free pumpkin Pancakes

1 1/4 cup gluten free flour (I used King Arthur)
3 tbsp sugar
2 tsp baking powder (make sure it’s gluten free)
3/4 tsp cinnamon
1/2 tsp each of ginger and salt
1/8 tsp each nutmeg and cloves
1 cup unsweetened almond milk
3/4 cup canned pumpkin puree (if you use solid packed, it will produce a denser pancake)
2 tbsp vegetable oil
1 egg

Fall is officially here! I had my first pumpkin spice latte of the season and I have dug the festive candles out of storage. What else pumpkin should I try? Pumpkin pancakes! So easy!

Pumpkin Pancakes


We have pancakes on Saturdays and making them pumpkin will be just the thing to spice up breakfast! Make up your pancake batter as normal (Bisque or some other fave). Then add in the pumpkin goodness! 1 c pumpkin puree, 2 t cinnamon, 1/2 cloves, 1/2 t nutmeg, and 1 t vanilla. Bake yout pancakes as normal and enjoy!
